Yes, It's that time of year again. The time to pull out all the ingredients to come to room temperature and bake to wonderous Christmas music! What better way to spend your weekend baking instead of focusing on finishing assignments and studying for exams. Of course I leave all my baking until after the final exam rush, but who can resist testing new recipes?
My family holds many traditions when it comes to baking at Christmas. We follow our English heritage and bake english shortbread, butter tarts, mince meat tarts, puddings, fruit cake, and of course, trifle.
Shortbread and other recipes will be left till later because right now, I want to focus on trifle. It is a tradition past down from my great grandmother all the way down to me. Trifle is loaded full of cream, booze, and sugary happiness. Like I say, "it's Christmas in a bowl." Through each generation, we all slightly revised the recipe according to how it works for us. My mother used to use Birds Custard for the custard, but I changed that to a vanilla pastry cream.
The recipe is as follows:
5 slices of pound cake
strawberry jam (to cover the top of the pound cake)
Sherry* (enough to soak the pound cake, the rest is yours ;) )
4 pkgs of jello (I use strawberry banana flavor)
frozen strawberries (2-3 handfuls)
2 bananas
pastry cream (1 litre)**
vanilla flavored whipped cream (1/2 litre)
-Layer according to ingredient list (as I do it) or you can alternate how ever you choose.
*I bought a bottle of sherry when I was in Spain 2 years ago and will use that until I run out.
**If you are curious about a good pastry cream recipe, give me shout and I will give you mine. Also 1 litre is a approximate, justify by the size of the bowl you use. Left overs are always great, especially around Christmas time!
